Fried black olives (Olive nero al forno) is a typical dish that is made on a large scale especially in southern Italy. They are served as an aperitif, together with meat and cheese. Seasoned with oregano and garlic, this dish has a unique smell and taste.
Making fried black olives is very easy. Choose ripe black olives. They should not be too bitter, but there is a way to make them a little less bitter: crush them with the heel of your hand after washing them. Crushing them will release their bitter taste during cooking.
Ingredients:
- 500 grams of ripe black olives
- Two tablespoons of oregano
- Two cloves of garlic (finely chopped)
- Sea salt (to taste)
- Extra virgin olive oil (to taste)
Preparation:
- Wash the olives well to remove any dirt.
- Bring a pan of water to the boil. Put the olives in the pan and cook them for about five minutes. Then drain them.
- Place the olives on a cloth and dry them well.
- Put them in a bowl and season them with a dash of extra virgin olive oil. Add the oregano, garlic and sea salt. Mix everything well.
- Then place the olives on a baking tray lined with baking paper and bake them in a preheated oven at 160° for about 35 minutes. Then remove the olives from the oven and let them cool completely.
- Before serving, spray the olives with a little extra virgin olive oil.
Suggestion:
If you like, you can add chili pepper pieces to your olives and make them a bit spicier. Or add a citrus note by adding a few slices of orange.
