As has been noted a few times before, the Caprese Salad is not a classic, but a relatively young invention. This salad originated in 1924 and perhaps we can call it a neo-classic.
Because the recipe for the Insalata Caprese still has a youthful character, purists do not immediately get stressed when someone comes up with an alternative recipe. We have discussed such a nuova ricetta a number of times before. Think of the Insalata Caprese all'Americana ('American-style Caprese salad'), the Salade Caprese alla Fragole ('Caprese salad with strawberries').

But mango is also an interesting choice to replace the tomatoes in a Salade Caprese. That gives this salad another interesting option. The sweet taste of mango harmonizes perfectly with the somewhat creamy taste of the Mozzarella. And imagine what the reaction of your guests will be if you serve them an Insalata Caprese con Mango .

By the way, you could also replace the Mozzarella with Burrata. Yes, that is also delicious because a Burrata is actually a Mozzarella filled with cream.

Ingredients:
- One fresh mango
- 250 grams of Mozzarella
- Two tablespoons of pine nuts
- A few basil leaves (torn)
- Extra virgin olive oil
- Pepper and sea salt

Preparation:
- Peel the mango and remove the stone. Then cut the flesh into slices.
- Cut the Mozzarella into slices.
- Roast the pine nuts in a dry frying pan until golden brown.
- Divide the mango and mozzarella alternately over a dish.
- Cover the mango and mozzarella with the basil and sprinkle the pine nuts over the salad. Sprinkle generously with extra virgin olive oil.
- Add pepper and sea salt to taste.
