A Refreshing Cucumber Salad by Jamie Oliver – Ready in No Time
This salad gets an extra kick from spicy red onion and fragrant dill.

Ingredients:

  • 1 cucumber

  • ½ red onion

  • White wine vinegar

  • Dill

  • Salt

  • Extra virgin olive oil

Preparation:

  • Use a fork to score deep grooves along the length of the cucumber, then slice it diagonally into pieces about 1 cm thick. Place in a bowl.

  • Coarsely grate half a peeled red onion using the large holes of a box grater.

  • Drizzle generously with white wine vinegar.

  • Pick the leaves from a small bunch of dill, finely chop them, and sprinkle over the salad.

  • Mix everything well.

  • Add salt to taste, if needed.

  • Let the cucumber salad sit in the fridge for about 30 minutes to marinate and chill slightly.

  • Just before serving, drizzle generously with extra virgin olive oil to enhance the flavors.
