Ingredients

  • 1 cucumber

  • ½ red onion

  • White wine vinegar

  • A small bunch of fresh dill

  • Salt, to taste

  • Extra virgin olive oil


Preparation

1. Prepare the Cucumber

Score the cucumber lengthwise with a fork to create deep grooves. Slice it diagonally into pieces about 1 cm thick and place in a large bowl.


2. Add the Red Onion

Peel and coarsely grate half a red onion using the large holes of a box grater. Add the grated onion to the cucumber.


3. Season and Flavor

Drizzle generously with white wine vinegar. Pick the leaves from the dill, finely chop them, and sprinkle over the salad.


4. Mix and Marinate

Toss everything together thoroughly. Season with salt to taste. Let the salad sit in the refrigerator for about 30 minutes to allow the flavors to develop and the salad to chill.


5. Finish with Olive Oil

Just before serving, drizzle generously with high-quality extra virgin olive oil to enhance the flavors and add a luxurious touch.
