The Flavours of the Souk

If you’ve ever wandered through a Tunisian souk, you’ve likely seen the ingredients for this simple, vibrant salad: ripe tomatoes, crunchy cucumber, and sharp red onion—staples across North Africa.

Mediterranean Roots, North African Twist

This Tunisian cucumber salad shares its base with the better-known Greek salad, but with a distinct local flavor. Instead of feta and oregano, it features fresh mint, Chemlali olives [read more about Chemlali olives], and a generous drizzle of our Tunisian extra virgin olive oil. In some versions, the olives are swapped for green apple to make the salad even more refreshing.

A Cool Contrast to Mechouia

This salad is often served cold, making it a refreshing counterpart to the warm, spicy Mechouia salad, another Tunisian classic made with grilled vegetables. Together, they form a delicious seasonal duo.

How to Prepare It

Chop the vegetables as you like. Mix with chopped mint, olives (or apple), and olive oil. Serve with a baguette – just like in Tunisia, where people scoop it up with bread instead of using a fork.
