The sun on your plate, that is this easy to prepare salad with mango and tomato.
The origin of this salad is probably India. There, in the sometimes extremely hot climate, tomatoes and mangoes are used to provide some cooling. No wonder that someone there once came up with the idea of combining these two healthy products into a delicious salad.

The sweetness of the mangoes goes very well with the slightly sweet and sour cherry tomatoes and the spicy taste sensation of red onions. The cumin in the dressing gives the dish an unexpected taste experience.

Ingredients:
- One ripe mango (diced)
- 500 grams cherry tomatoes (halved) -
One red onion (finely chopped)
- One teaspoon cumin powder
- Juice of half a lemon or lime
- Three tablespoons extra virgin olive oil
- Sea salt and pepper to taste
- Bunch of coriander (finely chopped)

Preparation:
- Put the mango slices, halved cherry tomatoes and red onion in a bowl.
- Make a dressing of the lemon juice, olive oil, cumin powder, sea salt and pepper. Mix the dressing well with a whisk.
- Pour the dressing over the salad.
- Put the salad in the fridge for another hour.
- Sprinkle the coriander over the salad just before serving.
