[Orange-fennel salad] |
Just a few ingredients are usually enough to create a delicious, easy to prepare and extremely healthy salad. One example is the orange salad, known in Spain as ensalada de naranja and in Italy as insalata di arance . Say these two names softly and you will understand that there must be a considerable relationship between the two languages.
The Moors introduced oranges to Europe around the year 720 in the southern Spain they had conquered, then known as Al-Andalus. Large-scale cultivation only began in the 10th century and remains of complex irrigation systems still bear witness to this. From Spain, the orange spread throughout the region and soon reached the Italian island of Sicily.
In both cases, the orange salad in its simplest form consists of thin slices (or segments) of orange, sprinkled with plenty of olive oil and seasoned with some pepper and salt.
Depending on availability, this salad is often supplemented with other ingredients. The best-known variant is the one with fennel and that is then called the orange-fennel salad (Spanish: Ensalada de hinojo y naranja and Italian: Insalata di finocchi e arance ). Another well-known variant is the one with red onion. In all cases, the ingredients are thinly sliced and mixed with the orange slices. A few black olives are often added to taste.

Oranges are also grown in Tunisia and they also use them in a delicious salad, the s'alata naranj . This salad traditionally consists of Tunisian oranges cut into segments or slices, red onion and olives. A dressing of lemon juice and olive oil goes with this salad. It is a dish that goes perfectly with grilled fish, although it will also be delicious with many other Mediterranean dishes.
Ingredients
: - three large oranges - one
red onion
- 50 grams of pitted black olives
- the juice of one lemon - a
handful of finely chopped parsley, coriander, mint or dill
- two tablespoons of extra virgin olive oil
- sea salt and pepper
Preparation:
Peel the oranges and onion and cut the oranges, red onion and olives into segments or slices. Sprinkle the finely chopped kitchen herb over it and mix the entire salad.
Squeeze the lemon and mix the juice with the olive oil. Add salt and pepper to taste and mix well with a fork or small whisk. Pour the dressing over the salad.
