- 120 ml extra virgin olive oil
- 2 tablespoons Dijon mustard
- 2 tablespoons white wine vinegar
- 1 tablespoon finely chopped fresh tarragon (or 1 teaspoon dried tarragon)
- 1 teaspoon sugar
- Salt and white pepper to taste
